CHOCOLATE PATE SABLEE DOUGH


Recipe
Walnut ( finely chopped )
58gm
Castor Sugar
65gm
Unsalted Butter
85gm
Egg
1 nos
Soft Flour
120gm
Cocoa Powder
4gm
Baking Powder
2gm
Cinnamon Powder
½ tsp
Oreo Biscuit ( crushed without cream )
30gm

Method:
1.    Cream butter and sugar until the mixture light and fluffy. Add the eggs until well combined.
2.    Sieve together cocoa powder, cinnamon powder, soft flour and baking powder. Add the flour mixture to the butter mixture.
3.    Add the Oreo biscuit and walnut using plastic spatula.
4.    Put in a pie mould and blind bake at 190°C for 15 minutes.
5.    Add the filling and baked again for 15 minutes.

Cheese Filling
Cream Cheese
125gm
Castor Sugar
30gm
Margarine
25gm
Corn Flour
30gm
Egg Yolk
3 nos
Egg White
3 nos
Double Cream
63ml
Melted Chocolate ( for pattern )

Lemon Juice
1 tbsp

Method:
1.    Cream the cream cheese. Add the castor sugar and butter until light and fluffy.
2.    Add the double cream.
3.    Then, add the egg yolks and mix well.
4.    Add in the flour. Keep aside.
5.    Mix with meringue.
6.    Put the filling inside the pie.
7.    Put a little bit of melted chocolate for decoration on the top.
